SEI's philosophy, 'Where East meets West', can be found in the unexpected mingling with the familiar, and in every moment when cuisine becomes a journey.
Chef Angel Jimenez's cuisine can be discovered through various options: lunch, aperitif, and dinner. Lunch is designed to be both accessible and refined. Sashimis, soft baos, and Landes chicken sando complete the menu, making it an ideal break after a morning of golf, a trip to the beach, or a walk around the hotel. For those wishing to extend their experience, the Day Pass allows guests to have lunch while enjoying the afternoon to relax or telework, with access to the swimming pool and the Chef's afternoon snack.
SEI's Izakaya Nights
As the sun sets over the Landes forest, SEI reveals another facet of its universe. On Thursday evenings, the Izakaya under the Pines invite you to extend the experience in a warm and friendly atmosphere.
Inspired by Japanese flavors, this venue offers generous cuisine to share: starters to share, meat and fish dishes, a dessert buffet, and a warm atmosphere make up this experience beneath the pines. Another way to discover the spirit of SEI, where gastronomy becomes an excuse for meeting, sharing, and long evenings in Seignosse.
70 Hectares brunch
The 70 Hectares brunch is a must-attend Sunday event. The buffet highlights seasonal products: seafood, colorful salads, Landes charcuterie and cheeses, and weekly rotating pastries and baked goods.
The house's iconic brunch preserves its essence while being enriched with a SEI touch, which reinterprets classics with Asian inspirations: Seignosse oysters spiced up with wasabi vinegar, coconut milk French toast, Kaya croissant with pandan jam, or homemade yuzu curd.
The Japanese corner also offers freshly prepared sushi, sashimi, tataki, or ceviche, accompanied by creative desserts such as black sesame cheesecake. Outside, the brazier extends the experience with prime rib, duck breast, and squid grilled over an open fire.

The SEI bar is designed as a true extension of the kitchen, exploring flavors with boldness and precision. Sake, Japanese whisky, matcha, and black sesame are showcased in refined and surprising cocktails. The Matcha Sour combines sake, gin, lime, and egg white, while the Asia Dubliner artfully blends Nikka whisky, Grand Marnier, and red vermouth. The prestigious Ki No Bi Sei Kyoto Dry Gin can be enjoyed neat or in a signature cocktail. The bar also offers original lattes—matcha, golden latte, or black sesame—for an elegant moment at any time of day.

Visit Day Pass allows you to enjoy a lunch (Appetizer & Main Course or Main Course & Dessert) with pool access and the Chef's afternoon snack, available from Wednesday to Friday for €55 per person. Low season only.

SEI also offers a unique concept: Apéro Karaoke. First settle in on the hotel's terraces for a locally-flavored aperitif, then join us in the private room to create your own playlist and sing along with friends and family, cocktails in hand. The atmosphere is both festive and warm, ideal for memorable evenings. Formulas include wine, Spritz or Gin Tonic, accompanied by savory platters, for groups of up to 15, with the room reserved for two hours to make the most of this moment with your loved ones.
